Eggplant Mini Pizza

Eggplant Mini Pizza is a gluten-free, low-carb pizza, and is full of vegetables. It is an easier and healthier version of the traditional pizza that we are all aware of. Eggplant slices can easily replace flour as the base, with fresh chopped veggies along with cheese being the topping. You can use any other veggies like Zucchini or Cucumber as the base, which too turn out to be tasty, but become a little soggy after baking.

Fewer ingredients, easier procedure and quicker process. This makes the dish even more special.


Kids will certainly love it. And most importantly, the ingredients like the veggies and cheese can easily be replaced with the ones that your kids love the most, or for that matter, with the ones that are easily available in your pantry!!!

Instead of tomato ketchup, you can use tomato puree or tomato sauce as preferred by you.

As these guilt free yet cheesy mini pizzas are gluten-free and low-carb, they make a healthier option for a perfect evening snack, or lunch / dinner for that matter.

Total Time: 26 minutes

Preparation Time: 10 minutes

Baking time: 16 minutes

Makes: 8 (Slices)

Main ingredients:

Eggplant : 1
Shredded Mozzarella cheese : 1 cup
Sweet corn: ½ cup
Chopped Tomato: ½ cup
Pepper powder: Little
Tomato Ketchup: Little
Salt: To taste
Olive oil: 4 tbsp.
Oregano: Little

Method:

Quick Video : 

·        Wash and cut the eggplant into ½ inch thick slices. Lay on a paper towel and sprinkle salt on either side. Keep aside for 5 minutes. This is to remove the bitterness out of the eggplant slices, if any

·        Blot these slices with a paper towel


·        Brush both sides with oil. Meanwhile preheat the oven at 210 deg. C

·        Bake the oil brushed eggplant slices for 3 minutes. Remove from the oven, flip the eggplant slices and bake again for 3 minutes

·        Take it out of the oven. Spread little ketchup on each of the eggplant slices. Layer it up with tomatoes, corn kernels. Sprinkle pepper powder and oregano

·        Finally top it with a layer of shredded mozzarella cheese. Bake for 10 minutes and serve immediately


Fresh, hot and guilt free eggplant mini pizza is ready to serve !!!

My daughter is a fan of Italian food, with Pizza and Pasta being her favourites. Throughout our week long trip to Italy, she enjoyed the various Italian delicacies in the local restaurants there. Though she gets to eat them all occasionaly, she relishes it every time she gets to eat!!! One evening, out of the blue, she wanted to eat pizza at home. Though I do bake one at home, it takes a little time to prepare the dough and let it rest ! Also, I wanted to make a more healthier version of pizza with lot of veggies and goodies in it. What followed is the eggplant pizza !!!  In this version of pizza, flour is totally avoided and eggplant is used as a base with lot of veggie toppings and yummy mozzarella cheese at the summit, giving this otherwise completely veggie pizza, an authentic taste. Not just that, my daughter also loved the size as it was just enough for her to hold and she could boast about saying – “I ate 2 full pizzas“!!!
