Cabbage Mint Dose / Pancake

What to cook, is easily perhaps the most difficult cooking related question that one faces on a daily basis. This stems from the fact that repeating the menu over the week is not always appreciated by the family. More than anyone else, I get bored cooking the same dish every other day. Besides, on a typically busy day, which is usually the case, time is limited and precious as a result of which, being able to spend too much time in the kitchen is more of a wishful thinking. In these circumstances, having a variety of quick recipes in hand helps a lot. Today’s menu is one that can easily qualify to be in this list. Cabbage mint dose / Pancake is not just easy to prepare but is also healthy and tasty. It is quite filling too.

This being a very healthy dish for breakfast, before we proceed further, I would like to highlight the health benefits of the main ingredients used in this recipe:

Gram flour:


With the inclusion of gram flour / besan, the protein requirement of vegetarians is taken care. Gram flour is also rich in fiber, thus acting as a cleanser. Also, the good news for people wanting to reduce weight is that it has lesser calories compared to wheat or rice. Its fiber and protein content reduces the frequent food cravings in you, thus helping you to reduce the excess fat in your body. Finally, it is gluten-free.

Cabbage:

This is the most widely available inexpensive leafy vegetable, rich in Vitamin C and fiber, thus being a good remedy for constipation and premature ageing.

Mint Leaves:

This is one of the most popular herbs. As soon as you hear the word mint, the first thing that comes across your mind is ‘Refreshment’. Am I right? Yes, it is commonly used in gums, candies, toothpastes, etc. But its benefits are not restricted to these alone. It is very good for digestion, weight loss, skin care and mouth care.

Onion:

Whether you eat it raw or cooked, onion is a rich source of nutrients. It fights cancer and diabetes. It is rich in Vitamin C, fiber, folate and iron.

This is one dish, which is easy to prepare, high on nutritional values and yummy to taste.

Total time: 30 minutes

Preparation time: 10 minutes

Cooking time: 20 minutes

Serves: 15 – 20

Ingredients: 

Grated cabbage: 2 cups

Grated Onion: ½ cup

Gram flour / besan: 1 cup

Mint leaves / Pudina: ½ cup

Ginger paste: ½ tsp.

Jeera / Cumin seeds: 1 tsp.

Asafoetida: ½ tsp.

Salt to taste

Method:

 

  •       Grind mint leaves with cumin seeds to a smooth paste

  •       Mix all the ingredients with little water to form the batter having a spreadable consistency

  •       Grease a non-stick pan with oil or ghee and pre-heat
  •       Pour a ladle full of batter on to the tawa and carefully spread it

  •       Cover the tawa with a lid and let it cook/pan-grill on medium flame until it turns golden brown

  •       Remove the lid from the tawa and flip the dose / pancake to cook the other side. Let it cook in medium flame for a few seconds
  •       Remove from flame and serve the hot dose / pancake with sauce or chutney of your choice

  •       Repeat the above steps with the remaining batter

Note :

  •       Normally, chutney goes well with dose. But, with this particular dose / pancake, I personally like to have ketchup / sauce
  •       You may even add about ¼ cup of rice flour if required
  •       You may even convert this dish to a vrat menu (have it when you are observing fast) without onion and rice flour in it

Cabbage mint pancake stories :

My little daughter, who curiously observes all the activities that I do in the kitchen, once wanted to help me in preparing breakfast. I said ok and asked her, what does she want to do? She immediately opened the fridge and on seeing the cabbage inside it she said, “Cabbage dose”. I obliged and gave her the individual cabbage leaves to her as she wanted to cut them using her toy knife. She was super excited to help me. I gave her a big bowl and a cup of gram flour along with some salt and water. After mixing, she handed over the bowl to me with a sense of satisfaction in her eyes. I was happy being a Montessori teacher to her. The above recipe is an enhancement to this dose / pancake, which by the way was an instant hit at home.
