Eggless Sugarless Glutenfree Oats Cake

A cake which your whole family would love to have and be guilt free at the same time – Eggless Sugarless Glutenfree Oats cake – as the name suggests, this is flourless and sugarless cake with the richness of oats and the goodness of fruit puree!

This goes as a perfect bake for your babies who have just started with their solids, for your toddlers and kids as a perfect snack box item and of course for yourself – a perfect guiltfree cake!

This recipe is completely plant based, thus fitting well into the vegan as well as vegetarian scheme of things!

Why don’t you try it yourself, to know it better?

 

Ingredients:

Oats: 1.5 cup
Banana puree: 0.75 cup (About 2 ripe)
Pears / Apple puree: 0.5 cup
Coconut oil: 2 tbsp.
Vanilla essence: little
Cinnamon powder: 1 tsp.
Dried fig: about 5 (chopped)
Blueberries : To decorate (optional)

Other items Used:

Mould: Cake mould (6 ” diameter round)
Butter paper / Baking paper : to line the mould

Method:

·       Powder the oats and keep aside


·       Prepare the banana puree and keep aside

·       Prepare pears / apple puree (clean, peel, chop, cook and puree) and keep aside


·       Mix the banana puree with pears / apple puree, coconut oil and vanilla essence


·       To the above, add oats powder, cinnamon powder, baking powder and give it a mix . Add chopped figs and mix(do not blend! Mix together in cut and fold fashion)


·       Preheat the oven at 180 deg. C.
·       Grease the cake mould and line it

·       Transfer the readied cake dough to it and bake at 180 deg. C for 30 minutes (or until the toothpick test passes)


·       Once baked, remove from the oven and let it cool. Unmould and serve! You may optionally decorate with some berries or top with whipped cream or fruit puree!

Note:

·       If the cake is low on sweet for kids, you may top it with maple syrup or dates syrup!


·       You may top it with whipped cream or fruits if need be!
·       Here, for the cake, I used pears puree as it is my son’s favourite. But you may alternatively use apple puree as well

Eggless Sugarless Glutenfree Oats Cake:

I baked this cake when our little son turned 10 months old!

The monthly milestone was more of a family time, where each one of us takes some responsibility to mark the day! In a way, it’s like patting ourselves on our own backs, that we as a small family together, successfully passed another month of taking care of our little boy, during a very difficult Corona pandemie times. While our daughter comes up with various photography ideas, my husband takes care of the milestone board and me, the food and the cake! For the 10 months milestone, I decided on this cake, with his favourite fruit puree – pears and banana! To make it more attractive for him, I topped it with his new found love – Blueberries! As expected, he grabbed the blueberries as soon as he saw the cake! Of course, he loved the cake too. Our daughter loved it as well, but with dates syrup and in no time, our little cake vanished!
