Eggless strawberry almond shortcake!!!

Most of us have a fantasy towards cakes. And why not, the smell of the cake being baked in the oven is like a pied piper blowing his pipe!!!

Well the yogurt cake has always been my favourite in terms of baking.  Shortcakes are similar to our usual cakes but baked from shortened dough, wherein the dough is just moist enough to put all the ingredients together. The crispy, crunchy and buttery soft cake sandwiching a layer of sliced strawberries and topped with whipped cream gives this cake the taste which will make you crave for more!!!


Let’s look into this quick and easy recipe for strawberry almond short cake:

Total time: 50 minutes

Preparation time: 10 minutes

Baking time: 40 minutes

Makes: 4

 

Main Ingredients:

Wheat flour: 1 cup

Sugar: 0.5 cup

Butter: 0.25 cup (room temperature)

Baking Powder: 1 tsp.

Salt: Little

Milk: 0.25 cup

Sliced Almonds: 0.25 cup

Essence: 1 tsp.

Whipped cream: 0.5 cup

Strawberries: Few

Method:

  • In a bowl put the flour, sugar, salt, baking powder and mix well
  • Add butter and mix until it starts to crumble. Now add milk and mix well. The mixture will be a soft dough, not batter
  • Preheat the oven at 180 deg C for about 10 minutes. Grease the muffin / cup cake mould and scoop in the prepared dough on to the mould. Fill the mould only up to the half mark
  • Sprinkle the sliced almonds on top of the dough and transfer the moulds to the oven. Bake at 180 deg C for 30 – 40 mins
  • Once the cake is baked, remove from the oven and let it cool
  • Once cool, carefully cut the top of the cake. Use the crunchy top of the cake as the base. Place the sliced strawberries over it. Now place the remnant cake over this and top it with whipped cream and more strawberries
  • Strawberry almond short cake is ready to relish !!!

Note :

  • Completeness of baking can be checked by performing the toothpick test : Insert a toothpick in the top of the cake and carefully pull it out. If it comes out clean, the cake is baked. Else, bake it for some more time
  • Sieving the flour before use ensures the softness of the cake

Season of berries. Apart from eating it as is, I used it in preparing confectionaries, desserts and dessert toppings. Among others, I loved the strawberries sandwiched between the short cakes along with the whipped cream. Served a beautifully layered and arranged strawberry almond short cake to my little daughter. Like most of the kids, she dismantled everything peacefully, ate the handpicked strawberries first and later went for the soft portion of the short cake, smearing the whipped cream over the crunchier base and after galloping a few bites, declared – my tummy is full!!! The more I spend time in arranging the dish, the more she enjoys in de-arranging it when served!!!

  1. Really amazing. First time I have come across these type of short cakes which are easy to prepare. Kids will love it because it is colourful as well as tasty. The ‘tooth pick test’ explained in the narratives is really interesting interesting. Keep it up
