Method:

  • Mix all dry ingredients in a bowl

  • To it, add the essence, oil and water. Mix well and keep aside

  • Meanwhile, preheat the waffle iron

  • Once the waffle iron is ready, pour the batter over the hot iron plates, cover it and let it cook for about 7-10 minutes

  • Once done, unmould the waffles, sprinkle powdered sugar over it

  • Top it with cream and fruit slices of your choice like strawberries / banana / kiwi

  • Serve the waffel hot and fresh!!!

Note:

  • Follow the instructions in the manual of the waffle iron that you have for preheating and cooking. I have used the waffle maker from croma. There will usually be a light which indicates the readiness. Mine, took about 5 minutes to indicate that the waffle is cooked. I cooked an extra 2 minutes to bring in the crispier texture. It is said that the batter without egg takes a little more time to cook compared to the batter with egg
  • Grease the mould with butter before pouring in the batter, in case your waffle iron requires greasing
  • Waffle topping can be customised to your liking. You may use honey or maple syrup or any fruit syrup for that matter in place of powdered sugar. The same holds good with fruit toppings. I have tried with strawberries, banana and kiwi and with each one of them, waffles taste amazing. You may also use jam or jelly or chocolate cream. Being a chocolate lover myself, i love to have waffles with some chocolate ganache as well
  • You may add cinnamon powder while sifting the flour, if you wish to
  • If you don’t have waffle iron, no worries. You may use your toaster or sandwich maker too to make one. The shape might differ but the taste will remain the same
  • The thicker the batter, the crispier will be the outer layer while the inner part remains soft
  • You may refrigerate and preserve the batter for upto 3 to 4 days and relish the delicacy as and when you wish for it

 Waffle stories:

Back during my childhood days, whenever my dad travelled back from Bangalore, he used to bring bagful of “Mangarams” wafers as we loved them the most. As their taglinei says, ” Makes life a little sweater”, the wafers indeed made our life sweeter :). It is from then that my tryst with wafers / waffles started. The bland wafers sandwiching the flavoured cream within, tasted much yummier than the normal biscuits. I always had a fascination for the little square blocked bake and after our trip to Amsterdam couple of years ago, my liking for waffles deepened further more. The crispy soft waffle with cream and fruit topping – Yumm!!! The tryst with waffle continued in Bangalore too during our weekend visits to malls. That’s when I decided, why not prepare waffles at home? After multiple trial and errors, I finally arrived at a simple recipe which gives the ultimate taste to this dish and yes, is egg-free too!!!
