Jackfruit Seed Butter

I know we all love jackfruit and relish it as much as we relish the dishes made out of it. But what about the jackfruit seeds? We normally discard them. But did you know that there are quite a lot of health benefits of these seeds? Well, the next time on, after you relish the fruit, do remember to preserve the seeds too. They can be dried and used for cooking. One of the easiest and tasty recipe using the jackfruit seeds is Jackfruit Seed Butter.

Keeping our fast lives in mind, this recipe is an easy to prepare and great to taste side dish, which goes well with rice or chapathis or any varieties of bread. The oldest member in the family would love it too as it is not hard to eat. The youngest member of the family too would love it as they can have yo-yo rolls of chapathi or any tortilla with the jackfruit seed butter as spread. You can even spread it smooth over a bread toast and have it for your quick breakfast.

Preparation Time: 10 minutes

Cooking Time: 10 minutes

Servings: 3

Ingredients:

Jackfruit seeds: 10

Buttermilk: ½ cup

Asafoetida: ½ tsp.

Salt to taste

Chopped coriander leaves: little

Chopped ginger: Little

For seasoning:

Mustard seeds: ½ tsp.

Curry leaves: Few

Ghee for frying

  •  Cook and peel the jackfruit seeds

  •  In a mixer, add the cooked and peeled jackfruit seeds, buttermilk, asafoetida and salt and make a smooth paste

  •  Transfer the paste to a bowl. Now, you may use the paste, as is, or enhance it further by following the below steps, as per your requirement and taste
  • To the above, add chopped ginger

  • Prepare a seasoning of mustard seeds and curry leaves in ghee and transfer it to the above

  • Mix it well. If required, add little water, till the desired consistency is reached

  • Garnish it with coriander leaves and serve it with hot rice or chapathi as is

  • You may even spread it over chapathi and serve the Chapathi roll with jackfruit seed butter spread or even spread it over toast for a quick breakfast
