Oats Corn Idli

The goodness of oats and corn, steamed instantly to a tasty and healthy breakfast dumpling, more popularly known in Southern India as Idli, is the Oats Corn Idli.

Fluffy, spongy idli can be a perfect candidate for a sumptuous breakfast. Well, when you do not have the fermented batter in stock, oats idlis are a perfect replacement, which can be prepared in a short time!!!


Low on carbs, high on nutrition and taste, ease of preparing – all together makes it ideal for a healthy breakfast / brunch.

Total Time: 35 minutes

Cooking Time: 20 minutes

Resting Time: 10 minutes

Preparing Time: 5 minutes

Ingredients:

Quick cooking oats: 1 cup

Corn: 1 cup

Semolina: 0.5 cup

Yogurt: 0.5 cup

Baking soda / Baking powder: 1 tsp.

Coriander Leaves: little

Water: 1 cup

Salt: To taste

Tempering:

Ghee: 1 tbsp.

Mustard seeds: 1 tsp.

Channa dal: 1 tsp.

Urad Dal: 1 tsp.

Cashew: 10

Ginger (Chopped): ½ inch

Curry leaves: little

Method:

  • Powder oats and keep aside

  • Heat ghee/oil in a pan. Add mustard, channa and urad dal to it. Once the mustard splutters, add ginger, cashew, curry leaves and saute for a minute.

 

 

  • Add semolina and saute, until it turns aromatic. Under medium heat, this might take about 2 minutes of time

  • Add powdered oats to it and mix well. Roast for another 2 minutes. Transfer it to a mixing bowl

  • Add salt and yogurt. Mix well

  • Add water and continue mixing. Add baking soda / baking powder

  •  Now add corn and coriander leaves. Mix well and let it rest for 10 minutes

  • Grease the idli moulds and transfer a spoonful of the batter to it

  • Steam cook it under medium heat for 20 minutes

  • Remove from heat and let it settle for about 5 minutes before you unmould the idlis

  • Unmould the idlis and serve with fresh coconut chutney or hot potato sagu.

 

Oats corn idli stories:

Come weekend, breakfast more often than not is different from the usual ones. When my daughter demands impromptu her favourite “white“ idli (rice-urad dal idli), this is something I resort to (well, I still need to explain her, why it isn’t white !!!).

Of the several oats dishes, I personally love to have this. Together with the potato sagu, it tastes as good as any of those served by famous Darshinis across Bangalore!!!
