Pumpkin Pasta

Pumpkin Pasta – Pasta with pumpkin sauce. Yummm, smells, tastes and looks wow. Most importantly, it’s easy to cook too and trust me, it easily can become your wholesome meal.

Whichever sauce you use, there is always something amiss if cheese isn’t included. But with this pasta, you can easily skip cheese, and dont even miss it !!!


Low on calories, a pumpkin is packed with antioxidants, vitamin A and many other nutrients. Other than health benefits, there are several other benefits too – availability of this vegetable round the year, can be stored without refrigeration for days together, can be used in any type of culinary delights and tastes, be it continental or Indian, sweets or curries, you name it and pumpkin offers a possible option.

Market racks are filled with a variety of pumpkins this season. One of the tempting reasons that make me try out variety of new dishes with this heathy veggie. Few of the pumpkin recipes that may interest you :

Traditional Indian Modaka with pumpkin filling

Total Time: 30 minutes

Preparation Time: 10 minutes

Cooking Time: 20 mintues

Serves: 3

Ingredients:

Pasta : 2 cups

Salt : To taste

Pumpkin sauce:

Pumpkin puree: 0.5 cup

Milk: 0.5 cup

Onion: 1 (Medium)

Garlic: 3

Spring onion greens: Little

Thyme: Little

Method:

  •       In a pan, bring water to boil and add pasta and little salt. Heat over low flame for a couple of minutes and keep the pan aside
  •       Pumpkin sauce: Meanwhile, in another pan, heat a little olive oil. Fry chopped onions and garlic until the onion turns translucent

  •       To the above, add the pumpkin puree, milk, salt, pepper, thyme and chopped spring onion greens. Mix well and bring it to boil

  •       Drain and add the cooked pasta to the above and garnish with coriander leaves and serve hot !!!

Note :

  •       You may add grated parmesan cheese to the above before serving, but it is purely optional
  •       You may convert the above recipe to vegan by replacing milk with coconut milk
  •       Pumpkin puree : Cook peeled and cubed pumpkin in little water. Cool .Smash either using a potato smasher or blender or a mixer

The pumpkin lover that she is, my daughter was spellbound, when I combined this love of hers with her other love – that for noodles / pasta. Yes, she was stunned looking at her colourful plate served for the evening snack. She platelicked the dish to its completion and asked for more. What more could I ask for !!!
