Rusk Fudge

In most of our households, mornings start with a cup of tea / coffee with biscuits or rusk. I am sure most of us know, what rusk is. To those, who don’t know, rusk is a double baked biscuit. It is baked differently in different countries and also consumed differently, but, it is more often than not consumed along with hot beverages. Rusk and fudge? Well, you heard it right.  Rusk fudge is a confectionary / sweet dessert, made using the rusk powder. If you are a frequent buyer of rusk, you might have seen that there is a good amount of powder or smaller rusk pieces at the bottom, which is thrown away. This dessert intends to avoid wastage and put it to a good use. And how do we do that?

Total time: 20 minutes


Preparation time: 5 minutes

Cooking time: 15 minutes

Servings: 16

Ingredients:

Rusk powder: 1 cup

Sugar: 3/4th cup

Milk: 3/4th cup

Ghee: 3 tbsp.

Roasted Nuts : Few

Cardamom: 4 to 5

 

Method:

 

  • Dry roast rusk powder for a few minutes

  • Add sugar and 1 tbsp. ghee and continue frying till sugar starts to melt and caramelize

  • Add milk and keep stirring in medium flame

  • To the above, add cardamom and continue heating

  • Once it takes the consistency of a smooth dough, add ghee, roasted nuts and fold it

  • Continue the heat for about 3 minutes or till the fudge starts leaving the tawa

  • Transfer it to a greased plate and let it cool

  • Refrigerate for 1 hour
  • Cut into small pieces, garnish with chopped almonds and relish

 

Rusk Fudge Stories:

Me and my sister can have any number of rusks with milk. There were times when, in competition, we used to finish off packets of rusk in a day. It used to be like a breakfast for us. And almost all the time, the powder in the packet was emptied by my sister, who could have it as is, like Upma. I could eat any number of rusk, but not the powder. Cut to the present, every time the packet reaches the last rusk, I safe keep the packet in a box if it contains remnants, thinking of means of finishing it, rather than disposing it off. Today’s dish is arrived at, as a result of my ideation. This I do when I have 1 box full of rusk powder. Everyone at home thoroughly relish this dessert. I am sure, you too will.
