Antina Unde | Gond ke Laddoo | Protein Rich Edible Gum Balls, is a very healthy and tasty sweet ball made out of ghee roasted protein rich dry fruits and plant derived edible gum rich in medicinal values.

 


This nutritious  ball is usually served to pregnant and nursing mothers as a good source of protiens and calcium. Having said that, this also serves as a healthy snack for everyone – from kids to adults.

The best part of this snack is that, it is not just healthy, but is yummy too. As they say, you can never stop at one!

My mom says the best edible gum to be used here is badam gum, if available, though the widely available one is from the acacia tree.

You may certainly include other dry fruits here such as the Pistacchio. As I didn’t find one the day I prepared, I have skipped it in my recipe. Having said that, the choice is totally yours as to which nuts to use and in what quantity. I have used as many nuts as I could gather and used as less jaggery as possible. The main ingredients thus remain to be – dry fruits, edible gum, dessicated coconut and ghee!

Makes: 40 – 50 Laddoos/ Balls

Total Time: 80 minutes

Preparation Time: 60 minutes

Cooking Time: 20 minutes

Ingredients:

Cardamom: 10

Nutmeg (Grated): ½ tsp.

Edible gum: 100 g

Cashew nuts: 100 g

Kishmish: 100 g

Almonds: 75 g

Dates: 100 g

Dry fig: 50 g

Walnuts: 75 g

Dessicated coconut: 4 cups

Jaggery: 300 g

Ghee: 250 g

Poppy seeds: 2 tbsp.

Method:

  • Clean all the ingredients and keep aside
  • Dry roast the dessicated coconut and keep aside
  • Chop the dry fruits finely and keep aside
  • In a deep pan, fry almonds, walnuts,cashew nuts,  kishmish, dates and dry fig in ghee in the same order, one after the other. One portion of the ghee is consumed for frying the dry fruits. In that sense, use little by little at a time for doing so

  • Once done, in the same pan, add some more ghee and fry the edible gum using a sieve. Do this in multiple batches. Keep aside

  • In the same pan, add the remaining ghee. Add jaggery to it and let it melt. Do not add water to it. If need be, sieve for any solids in it. Pour it over the ghee fried dry fruits

  • Powder the fried edible gum and keep aside

  • In a pan, add little ghee and fry the poppy seeds, keep aside

  • Now, powdered edible gum, add the poppy seeds, powdered nutmeg and cardamom to the jaggery, dried fruits mixture. Add the dessicated coconut as well. Mix well

  • Grease your palm with ghee and make balls of desirable sizes

As the process is free from water, it lasts for atleast 2-3 weeks when stored in cool and dry place. But I am sure, the taste will not keep you away from the container for so long and it would anyway get over much quicker!

First and foremost, I would like to thank one of my aunts whom I fondly call Mami, for making these yummy balls for me during my post delivery days, back in Bangalore.

I can still remember her visit to our house, to meet my little girl and helping mom in preparing these protein rich balls for me. The smell from the kitchen couldn’t stop me then from entering the kitchen and peeping between their shoulders to see curiously, how this is being made! Until then, Antina Unde used to be something, which was just available in sweet meat stalls and stores! Never knew, we could prepare it so easily at the convenience of our homes!

Till date, I remember the day. We all had so much fun preparing this laddoo at home. It was a complete family affair. Well, this was followed by multiple rounds of antina unde making days, as it was loved by everyone at home and never used to last beyond 10 days!

Recently when I prepared it here, I just couldn’t stop remembering Amma, Mami and Appa, and the antina unde preparation back then. The main task here is to catch hold of the right ingredients which then my father would do, without any hesitation and complaints, and now here, of course, my dear husband does it for me!

 

Following the ingredients gathering, the next time consuming task is to chop the dry fruits uniformly. It was once again a family affair. While me and my husband chopped the nuts, our daughter chopped the softer ones like the dates and fig.

I would say, anything that is healthy, satisifies the taste buds and brings family together, is worth the time, effort and penny!
