Eggless Pineapple Upside-down Cake

‘Upside-down cake’ – As the name suggests, it is a cake, baked along with its toppings and served ‘Upside-down’! This simple pineapple upside-down cake is not just easy to bake, but tasty too! The pineapple slices along with the caramel, topping the soft cake, brings in a heavenly taste to the cake, which is irresistible. Do try to know it!

Total Time: 65 minutes
Preparation Time: 15 minutes
Baking Time: 40 minutes

Ingredients:

 For the topping layer –
Pineapple slices : 4
Sugar: 2/3 cup
Butter: ¼ cup
Lemon juice: little

For the cake dough – 
All purpose flour: 1.5 cup
Curds: 1 cup
Baking Powder: 15 g

Oil: 0.5 cup
Milk: 0.25 cup
Sugar: 0.75 cup
Vanilla essence: 2 ml
Other required items:
Baking pan : 7*7 inch tray ( You may use any of your choice)
Oil for greasing the baking tray


Method:

  • Grease the baking pan
  • Preparation of the topping layer:
    •   In a pan heat butter and once it melts, add sugar (you may use brown sugar too). Once the sugar melts, add lemon juice and caramelize. Remove the pan from heat and spread the contents on the greased baking pan
    • Place the pineapple slices carefully over it and keep aside
    • Preheat the oven at 180 deg C

  • Cake batter preparation:
    • In a bowl, mix the wet ingredients (except milk) with sugar and beat well
    • Add the dry ingredients and combine well (You need not beat it). Finally add milk and mix again
  • Assembling and baking:
    • Take the baking pan, which by now, already consists of the first layer topped with pineapple slices. Pour the cake batter over it carefully and pat to release air bubbles, if any
    • Place the baking tray in the preheated oven and bake at 180 deg C for 30 to 40 minutes
    • After 30 minutes, do perform the toothpick test to check if the cake is baked. If not, continue baking until it is completely baked and toothpick comes out clean when the toothpick test is performed
    • Once baked, remove from the oven and let it cool
    • Slow and careful, release the edges. Cover the baking tray with a flat plate or tray or cutting board and very carefully, turn the baking mould upside down
    • Gently remove the baking pan and separate the cake out!
    • Bingo! Pineapple Upside down cake is ready!

Note :

  • Baking is an art. There is no fixed standard time, ingredients, shapes or materials used. Time to bake a cake largely depends on the oven, the size and shape of the baking mould used, the consistency of the dough / batter and the ingredients that go into it. A perfectly baked cake combines all these into one! Thus, when I say, you can use any mould of your choice, it also goes without saying that, with any changes incorporated, the time required for the cake to be baked too differs!
  • Pineapple slices : You may use fresh pineapple, peel it and carefully slice and use it for this bake. I have used canned pineapples here, one, for lack of time, and two, for the perfectly shaped pieces
  • Why use lemon in preparing the sugar caramel : It is purely optional. But we would not want a crystallized caramel in our cake. And adding lemon juice while mixing sugar and water, prevents the process of crystallization!

    Pineapple Upside-down cake stories:

    Our little boy turned 5 months old recently! And it was the month, which saw him roll over on his tummy and see the world upside down (from his view!). Just to mark this occasion and make it more special, I baked a pineapple upside down cake! The theme of the celebration was coincidently Yellow! Corona times, sleepless nights and restless days, with us, just on our own to take care of everything, we all needed a reason to celebrate, thank God and be happy about. Such celebrations bring in little family time where each person contributes in his / her own way. Ideating and planning is largely me, arranging and coordinating is taken care of by my husband, photographing ideas and convincing the little one to be part of our craziness is taken care of by my daughter, while ensuring that everything goes smoothly is all in the hands of our little man!

    Every month, when I start getting ready (which, with a little baby and day to day routine work, is not a one day job), my daughter eagerly comes to me and asks, what are you baking next! I give her a few options and ask her opinions and inputs. Now a big girl, her inputs are very genuine and valuable to me. When I told her that I shall be baking Upside-down cake, she said – Wait! What cake? ! I asked her to wait and watch. The obedient girl that she is, she eagerly watched everything that I did. Both my husband and daughter were curious to see, know and taste this cake, which sounded so unusual!

    Everyone loved the cake and it was over in no time.
