Jackfruit Ice-cream

Jackfruit is a sweet exotic fruit which we all cherish wholeheartedly.

Jackfruit – as the name says, is the jack of all fruits and comes with a lot of health benefits. It is rich in vitamins, minerals, fibre, fat and proteins. Lot of people have a strong notion that consuming jackfruit in its raw form upsets the digestive system. But, the fact is – consuming jackfruit helps in detoxifying the system as it is rich in fibre.


Jackfruit can be consumed raw as well as cooked. There are quite a lot of traditional delicacies involving ripe and unripe jackfruit. In this season of jackfruit, let’s try out an unconventional recipe, which is easy to prepare with easily available ingredients and tastes divine – Jackfruit Ice cream. Yes!!! What are we waiting for, let’s get started!!!

Total time : 50 minutes

Total preparation time : 5 minutes

Cooking time : 45 minutes

Ingredients :

Full fat milk : 1 ltr

Jackfruit carpels : 1 cup

Sugar : 1/2 cup

Saffron strands : Few

Vanilla essence : 1/2 tbsp

 

Method :

  • Soak the saffron strands in little milk and keep it aside

  • Transfer the milk to a container and bring it to boil

  • Add sugar

  • Add saffron strands soaked in milk

  • Simmer and continue heating
  • Parallely, grind jackfruit carpels to a smooth paste

  • Add essence to the milk once it is reduced half of its initial quantity

  • Add jackfruit paste and mix well

  • Remove from heat and let it cool for a while

  • Refrigerate it for about 6 hours

  • Remove it from the fridge, whisk it gently and freeze it for 6 hours
  • Top it with nuts of your choice and honey.

Jackfruit ice-cream is ready 🙂 Relish , before it melts 🙂

 

Jackfruit stories : 

Jackfruit happens to be one of my favourite fruit. And like mangoes, this is also harvested in Summers. My fondness for the fruit grew right from my childhood days. During our summer vacations, all of us cousins used to spend our much-awaited holidays playing together, fighting, exploring and of course relishing the rural delicacies. Jackfruit being abundantly available in that season, used to easily fuse in with all our meals!!! Be it our breakfast in the form of pancakes or idlis, lunch in the form of jackfruit sambars or dry curries or sweet pudding or payasam, snacks in the form of chips or sweet balls and dinner in the form of jackfruit yogurt curries; The same base, yet so many tastes!!! That is the speciality of jackfruit!!! We relished it so much that, even after 3 jackfruit laden meals (!!!) we didn’t mind eating raw jackfruits in between meals.

Not just the food, jackfruit even creeped in to our fun time!!! During the peak summers when the scorching sun used to be right over our heads, we made papads and dried them, being scare crows!!!

Coming back to today’s recipe, don’t forget to top the ice-cream with honey and nuts of your choice. Yes, honey-jackfruit combination is just out of the world. And who gave me this tip ??? Yes of course my little daughter. Ask her why ??? She says, she has seen bear eating jackfruit with honey in one of her rhymes!!!

 

Note : 

The riper and softer the jackfruit the better it is. You may adjust the sugar input as per the sweetness of the jackfruit. The jackfruit that I  used here had mild sweetness.Sugar has been used accordingly to bring in the right taste to the ice-cream.
