Carrot Jam

Confectionaries like jams are usually made in late spring or summers. But this winter, with fresh carrots in the market, I couldn’t resist myself from purchasing bags full of carrots.  One perfect way of relishing carrots is in the form of Carrot Jam. Yes. It goes very well with morning breakfast toast or any form of bread.

I am on a jam making spree these days. I usually prepare a bottle full of jam which lasts for about a month. Every time a new variety of jam. Why just fruits? Quite a few vegetables can be turned into tasty jams, carrots being one of the best candidates.


You may even like the Mixed berries jam, strawberry jam and pineapple jam.

Simple and tasty, here we go with the carrot jam recipe:

Total Time: 25 minutes

Preparation Time: 5 minutes

Cooking Time: 20 minutes

Ingredients:

Carrot: 1 kg (1 carrot grated. Rest, chopped)

Jam sugar / gelier Zucker: 0.5 kg

Lemon zest: of 1 large lemon

Lemon juice: of 2 large lemons

Method:

  • Steam cook chopped carrot until soft

  • Once cool, puree it

  • Put the grated carrot  in the sauce pan and fry for a few minutes. To it add the puree and mix well
  • Add sugar, mix well and bring it to boil

  • Continue cooking for another 5 minutes on low flame

  • Add lemon zest and juice. Stir well

  • Once it reaches the jam consistency, remove from heat

  • Let it cool. Spread it over bread and consume fresh or bottle and refrigerate it. It lasts for a month

Carrot Jam stories:

Last summer, my parents came visiting us in Stuttgart. That’s when I first prepared carrot jam. As we had few back to back travel plans, I prepared this jam, along with few other confectionaries to carry in our trips. It certainly came handy for our quick breakfasts during our trip. So, I repeated it this time of the year, when I found lot of fresh carrots. The lemon zest is like the topping over the cake. Jams are fun to prepare and the satisfaction of replacing the store purchased bottles with homemade ones is very reassuring and beyond expression.
