Eggless Gulab Jamun Cake

When East meets west, the outcome cannot get better than Eggless Gulab Jamun Cake!

Gulab Jamun is a popular sweet dessert in India. As the name suggests, this dish gets its name from the rose flavour that accompanies the soft milk solids’ balls soaked in sugar syrup, enhanced with the flavours of saffron strands and powdered cardamom. Don’t tell me that your mouth hasn’t started to water yet!


This is one of the most loved sweet dishes in any traditional Indian household. Today’s recipe is a simple fusion of this very much loved sweet dessert with a cake, which is eggless.
Trust me, the result will not fail to flatter you!

Fusion cakes are quite a common sight in bakeries across India, and of all, Gulab Jamun cake and Rasmalai cake make it to the top of the list. (I shall soon come up with this recipe as well). Fusion cakes do not have a specific standard and are totally up to the creativity of the person who bakes it, to bring in the fusion in a seamless manner!

The Gulab Jamun fusion cake which is mentioned below, is a simple recipe, yet, one which will never fail to impress you. The base cake recipe remains the same, with little modification to the quantity of the ingredients that go in.

Here we go with the recipe for the Eggless Gulan Jamun Cake!

Ingredients:

Cake:

All purpose flour: 2 cups
Yogurt: 1 cup
Sugar: 0.75 cup
Baking powder: 1 packet
Rose essence: Few drops
Cardamom powder: 0.5 tsp.
Oil: 0.5 cup

Frosting:

Whipping cream: 400 g
Powdered Sugar: 4 tbsp.

For layering :

Gulab Jamun : 7 to 8 pieces
Gulab Jamun Syrup

For Garnishing:

(It’s totally optional and upto your creative instincts and liking)
Pista pieces : little

Gulab Jamun : Few

Other:

Cake mould (6 ” diameter round)
Piping bags and nozzles of your choice
Whisk (manual or electric)
Baking sheets
Turntable (optional)
Toothpick

Method:

Step 1: Prepare Gulab Jamun

Step 2: Next prepare the cake (cake preparation)

Step 3: While the cake was cooling, prepare the cream and refridgerate it (whipped cream preparation)

Step 4: Next, divide the cake into half and start to assemble all (assembling the cake)

Step 1: Prepare Gulab Jamun

–        This time around, I used MTR Gulab Jamun Mix to prepare the gulab jamun, clearly following the instructions given in the packet. (though I reduce the sugar syrup to half the quantity mentioned, as it is more than enough for our requirement). You may either purchase ready made gulab jamun for this cake, or prepare from scratch or use a ready mix.

Step 2: Cake preparation

–        Sieve all the dry ingredients mentioned under cake section above and keep aside
–        In another bowl, bring in all the wet ingredients together and beat
–        Meanwhile, preheat the oven at 180 deg C
–        Bring together wet and dry ingredients


–        Line the greased mould with baking sheet and transfer the batter to it


–        Bake it at 180 deg C for 45 mins to 1 hour (depends on the type of oven and the size of the mould used)


–        Perform Toothpick test to confirm that the cake is completely baked
–        Once baked, remove from the oven and let it cool

Step 3: Whipped cream preparation

–        In a bowl, take the whipping cream and add the powdered sugar to it
–        Start to whip slowly if you are not confident as to when to stop. Continue whipping until peaks start to form
–        When to stop : When the peaks are firm enough and doesn’t drop off from a spoon, when scooped out

Step 4 : Assembling the cake

–        This is my favourite step of all. By now, the cake would have cooled down
–        Divide the cake into 2 parts. Take the bottom half.


–        Place a cake board over the turntable and apply a little cream over it. Place the bottom half of the cake over it
–        Prick the cake using a toothpick (Multiple pricks). Slowly, pour / apply the gulab jamun syrup over it. Apply a layer of cream over it

–        Take few gulab jamuns and break into small pieces. Spread the crumbled pieces over the cake


–        Take the other half of the cake and place it over the bottom half
–        Prick it with a toothpick and pour gulab jamun syrup over it
–        Using a spatula and palette knife apply the first layer of whipping cream. Once done, refrigerate for about 15 minutes before proceeding further
–        Meanwhile ready the piping bag with nozzle of your choice and fill it with cream
–        Decorate the cake using cream. Take a few more gulab jamuns and cut into half pieces. Top the cream layer with gulab jamun pieces
–        Sprinkle pista pieces over it


Simple Gulab jamun cake is ready to relish!

Note :

·        Use chilled whipping cream and keep the whipping blades in the fridge before whipping, for better results

Gulab Jamun Cake Stories:

Post delivery of my second baby, I was under food restrictions and it was a while since we prepared sweets at home. My daughter and my husband love gulab jamun. Our little one turned 4 months old and we had a reason to celebrate. My clients (daughter and husband) asked for Gulab Jamun and I heard Gulab Jamun Cake!!! Both were excited with my proposal and keenly followed me till completion. I myself loved the way it turned out and the cake got over in no time!
