Eggless Semolina Cake

What strikes to your mind as you hear – Semolina?

Well, being a South Indian, Semolina resounds Rava Idli / Upma/Rava Dose/ Sheera. Well, among the wide varieties of dishes that can be prepared out of semolina, here we go today with an easy eggless bake – Semolina Cake!


Preparation Time:  35 minutes

Baking Time: 40 minutes

Total Time: 75 minutes

Makes: 8 slices

 

Ingredients:

Semolina/Rava(Small)/Gries: 1.25 cup

Wheat flour: 0.25 cup

Sugar: 1 cup

Oil: 0.25 cup

Yogurt: 0.5 cup

Milk: 0.75 cup

Sunflower seeds: 0.25 cup (Optional)

Baking powder: 15 g

Vanilla Essence: few drops

Salt: A pinch

Baking mould (I used a 10 inch mould)

 

Method:

  • In a large mixing bowl, bring in sugar, oil, yogurt, milk and vanilla essence and beat them all together
  • To it, add semolina and mix well. Set it aside for 20 – 30 minutes
  • Preheat the oven at 180 deg. C, when it is 25 minutes past the setting time.
  • Next, take the above mixture and mix again. Add in wheat flour, baking powder, salt and mix well
  • Add in the sunflower seeds to it and mix
  • Transfer the above content to a greased mould and bake at 180 deg. C for about 40 minutes (Or until a toothpick inserted to the cake comes out clean(Toothpick test))
  • Remove from the oven and let it cool. Slice and relish it  !!

Tip:

  • Gries – as it is called in German, is commonly found in the supermarket racks in Germany. It can be used here. Not just for the cakes, but can be used to prepare variety of Indian dishes too, in place of small rava.

Semolina Cake stories:

The baking freak that I am, my feet stop , in front of the endless baking racks of the German supermarkets, looking at various baking stuffs and thinking about various baking options.

During my second pregnancy, a dear friend baked this cake for me and I was carried away by its taste. It didn’t strike to me until then – I had never tried my hand in preparing cake with Semolina! Being a South Indian, the instant dish that gets picturised when I see Semolina – Uppittu/Upma, Rava Idli, Rava Dosa!!!

Now, I had to try it out. The dear friend not just baked the cake, but shared the recipe too!

With small twists, here I am, with the Eggless Semolina Cake. I baked it recently when my daughter demanded a cake as our little one turned 2 months!
