Mint Spinach Pulav | Pudina Palak Pulav

Prep. Time: 20 minutes

Cooking Time: 15 minutes

Total Time: 35 minutes

Servings: 3-4

Ingredients:

For the paste:

Mint leaves: 1 bunch

Spinach: 1 bunch

Green chilli: 3 to 4

Garlic: 2 pods

Ginger: 0.5 inch

Onion: 1

Cinnamon sticks : 0.5 inch

Cloves: 2

Cardamom: 2

Coconut : 3 tbsp.

Cashew: 4

Others :

Green peas: 1 cup

Rice: 1.5 cup (Soak for about 15 minutes)

Onion: 1

Yogurt: 3 tbsp.

Jeera: 1 tsp.

Cashew: 8

Bay leaves: 1

Oil: 2 tnsp.

Salt: As per taste

Raisens: Few

Water: 3 cups

Method:

  • Blanch spinach for say 3 to 4 minutes. Keep aside and let it cool
  • Grind all the ingredients under ‘For the paste’. Keep aside
  • In the cooker, heat some oil. Add jeera, bay leaf, cashew and fry. Once the cashew is turning golden brown, add raisens and fry for a minute
  • Add the onions slices and fry until they turn translucent
  • Now add the ground paste, salt and saute
  • Next, add the soaked rice, green peas,3 cups of water and cook in medium heat for 2 whistles
  • Serve hot with cucumber raita or tomato-onion raita!

Note :

  • If you want the pulav to be a little grainier, you may opt to reduce the water input or also opt to cook in a pot, than a cooker. Needless to say that the texture is largely dependant on the type of rice one uses.
  • I prefer to cook in the cooker, as it is faster, easier and most importantly, cooks optimally.

“Samstag Einkaufen”- The Saturday Shopping is a very popular trend in Germany. There are supermarkets on one side with great deals and options, and farmer’s markets on the other side with fresh and natural Bio products setup every Saturday in various centers of the town.

The main reason for this trend is that the shops close sooner during the working days and on the mandatory ‘RuheTag’, i.e. holiday in German, which falls on a Sunday, shops are closed and nobody wants to wake up to an empty refrigerator.

I look forward to the Saturday morning shopping, mainly for the fresh fruits and vegetables that the markets have to offer. More often than not, I end up buying more than what is required, as the fruits and vegetables are so fresh looking and tempting.

Once back home, I need to prepare a strict menu for the week to ensure that they don’t go waste, especially the greens. The earlier they are consumed, the better it is!
On one such day, I ended up buying lot of greens – Spinach, Mint, Rucula / Arugula and what not!! All of these, being extremely healthy, I wanted to ensure that I incorporate them all, based on their shelf life, in the week to come. And thus, I started our Sunday lunch with Mint Spinach Pulav!! Healthy, wholesome and tasty!
