Tomato Capsicum Garlic Chutney (Postpartum Recovery Meal Plan Special)

South Indian breakfast is never complete without chutney, coconut chutney being the most common one. Having said that, there are a wide variety and even more ways of preparing the same, depending upon your liking, requirements or any dietary needs.

Here, let’s look into one specific variant of chutney, which is tailor made to the needs of the postpartum recovery meal plan, that would leave you licking your fingers – Tomato Capsicum Garlic Chutney. The three ingredients here impart the necessary taste and aroma to the dish that one would be forced to say – can such an easy recipe be so tasty and healthy at the same time?

Ingredients:

Ripe tomatoes: 2

Capsicum: 1

Garlic cloves: 6

Pepper powder: Little

Mustard seeds: 1 tsp.

Jeera: 1 tsp.

Salt: as per taste

 

Method:

  • In a pan, add little ghee. Toss garlic cloves, chopped tomatoes and capsicum. Optionally, you may bake them by slightly brushing oil over it and lining it in a tray and bake for 5-10 minutes at 180 deg.
  • Now, transfer everything to a mixer/blender. Add the pepper powder, turmeric powder and salt and blend to a fine paste.
  • In a pan, add little ghee and prepare a tadka of mustard and jeera. Once spluttering, add it to the chutney prepared.

Note: if not for diet, add red chilli instead of black pepper powder

 

Tomato Capsicum Garlic chutney stories :

My daughter calls this particular chutney ‘Pesto’. It brings in a totally different aroma to the regular chutneys which is so much to the liking of the kids and adults alike. Come weekends, I love to prepare breakfast after taking a poll, and more often than not, there is a conflict between our wants and those of our daughter’s! The only exception to this trend is the Urad dal dose, which happens to be the favourite of us all. Then would come the next question – what shall go as an accompaniment to the dose! Though chutney is voted for, I am left to decide on which variety to prepare. As part of the preparation of the postpartum meal plan, I had tried Tomato Capsicum Garlic chutney during my pregnancy time and everyone had loved it. My husband liked it for its taste as well as the simple steps that went into its making (This was important for him as he had to take over cooking for a brief period). Now, it is one of the most commonly prepared chutneys at home 🙂
