Eggless Honey Cake

Eggless Honey Cake – Corona Times, brought in lot of ‘Home time’! The initial few months were literally – Stay at home – days! Just to make the best use of this time, we ensured that, we have all our meals together, ensuring, more family time! We got to discover each others’ childhood more and cherish those days. Our daughter too eagerly gave ears to it!

At one such discussion, my husband brought in the topic –  the various bakery stuffs that he cherished and loved as a kid. One of them being Honey Cake! He explained it in such detail that our mouths started watering!


The usual honey cakes are very juicy, due to the sugar syrup in it! I have replaced it with honey and fruit juice here in the recipe. You may use any fruit juice of your choice. I have used fresh orange juice (or say, orange extract!) here!

Its is a simple vanilla sponge cake, dipped in juicy honey syrup, topped with a thin layer of jam glaze and coconut flakes to top them all!

Your first bite, will leave a sweet, juicy taste on your taste buds first, followed by that of the buttery soft sponge cake only to be followed next by the heavenly tasting strawberry jam and finally the crunchy coconut flakes!

You cannot stop with a single bite, I bet!

Ingredients:

For the cake:

Wheat flour: 2 cups

Baking Powder: 1 packet

Salt: A pinch

Yogurt: 1 cup

Sugar: 1 cup

Oil: 0.5 cup

For the Honey Glaze:

Honey: 5 tbsp.

Rose water: 1 tbsp.

Orange juice: 5 tbsp.

For the Jam glaze:

Fruit Jam: 5 tbsp. (I used strawberry jam)

Sugar: 3 tbsp.

Water: 3 tbsp.

Topping:

Coconut Flakes /Kokosraspeln : Little

Method:

Cake:
  • Preheat the oven at 180 deg. C
  • Grease, dust and line the baking mould. Keep aside
  • In a bowl, sieve the wheat flour, salt and baking powder. Keep aside
  • In another bowl, add in the yogurt, oil and sugar. Whisk until smooth
  • Now, add the flour mix to the liquid mix and slowly bring them together in a cut and fold method, until it is all brought together! Don’t over mix
  • Transfer the readied cake batter to the mould and gentle pat. Place the mould in the oven and bake at 180 Deg. C for about 40 minutes (more or less, depending upon the oven, mould size and the flour. Keep an eye on your cake, say, after 30 minutes)
  • Meanwhile prepare the honey glaze and jam glaze as mentioned below
  • Once the cake is baked (You may perform the tooth pick test for the same), take it out and let it cool
  • Once the cake is cooled,  unmould it and place it on a tray. Carefully prick the cake with toothpick

  • Spread the honey glaze all over
  • Cut and mark the cake into desired shapes

  • Apply the jam glaze all over it

  • And finally, sprinkle the coconut flakes all over liberally. Let it sit for a while, before you carefully take out a slice and serve!
Honey Glaze:
  • Mix all the ingredients under ‘Honey Glaze’ well and keep aside

Jam Glaze:
  • In a pan, add the ingredients mentioned under ‘Jam glaze’ and mix well. Heat until a smooth glazy mixture is formed. Bring it to boil and remove from the heat. Let it cool

Toothpick test:

This is a very common test performed to check the completeness or readiness of the cake being baked.  It is usually performed after a certain time(the estimated time of completion of the baking) , to check, if the cake is actually done or if it needs to be baked for any more time! The need for it usually arises, as the bake duration is largely depedanted on the oven, the mould used, the ingredients to go in and the temperature at which the cake is being baked!

A clean toothpick is carefully inserted, in the middle of the cake, and pulled out. If the toothpick comes out clean – Congratulations, the baking is complete!

If the toothpick is sticky – Good Job! you have taken the right decision to perform this test! Your cake needs some more time of baking before it is complete!

With all the chaos, stressful days of bringing up our little man, all on our own, we ensured that we celebrate all the little and big milestones! Because, for us, this was one way of bringing in smile in the face of our daughter, who, in those days, was being more than an 8-year-old, helping us with all the little things to keep our days going! It was also important for us, as, such little celebrations, clicking pictures, making memories, helped us in charging ourselves for the upcoming days! For me, it was even more important, as this was my – Perfect therapy – to come out of the postpartum depression! My husband supported me in his best possible ways, to ensure that it happens!

So, here I go! After a whirlwind 3 months, which I cannot explain here in words, I was looking forward for the -100 days mark! Basically, why honey cake for the 100 days mark? Honey cake is my husband’s favourite since his school/college days and strawberry jam my daughter’s! And of course, my lil girl, given any day, is my Cake girl! As our little man turned 100 days, I wanted to do something which is dear to all – and baking is dearer to me!

This juicy cake was over in no time! Had shared a few pieces of the cake with a dear friend and her family here, who have been more than our friends here!

And of course, we took a lot of pictures with the little man, the cake and us! Thus, creating few good memories for our year album!
